200g Jeju Hanwoo Striploin – $158
Featuring Korea’s highly coveted Hanwoo beef, renowned for its exquisite marbling and rich flavour, the 200g striploin is expertly fire grilled over Bedrock’s signature applewood fire to bring out its natural succulence. The dish is accompanied by steamed padrón peppers, offering a simple complement that allows the premium beef to take centre stage.
Nuruk Marinated Jeju Black Pork Rack – $78
Prepared using Jeju’s celebrated black pork, the rack is marinated with traditional Korean nuruk, lending subtle savoury complexity to the meat. Finished over the applewood fire and paired with a velvety black garlic purée, the dish delivers a harmonious balance of smoky, sweet and umami notes.
Exclusive Beverage Pairing
First 100 tables will receive a bottle of Seoul Silver (서울실버). This modern, premium takju is meticulously naturally fermented at low temperatures using a proprietary, house-cultured wild 'Seolhwagok' nuruk. The result is a beautifully creamy, yogurt-smooth texture carrying bright tropical notes and a clean, delicate sweetness that provides an excellent counterpoint to wood-fired premium meats.
